Easy, peasy noodle soup

My go to super quick and easy noodle soup.


1 ltr chicken or vegetable stock

2 spring onions finely sliced

1 tablespoon Oyster Sauce

1 tablespoon light Soy Sauce

1 tablespoon Sweet Soy (Kecap Manis)

200g (or two nests) dry noodles of your choice

5 leaves bok choy/pak choi sliced


Boil stock

Add 3/4 of the spring onion, oyster and soy sauces

Once boiled add noodles and vegetables and let simmer for 5 minutes. If you prefer prepare noodles according to packet and add cooked noodles when serving.

For a heartier soup add some shredded roast chicken and more vegetables (snow peas, baby corn, cabbage, edamame)

Garnish with remaining spring onion and fried shallots.
