Super simple weeknight meal for the whole family. Filled with sneaky veggies for little bellies.
Ingredients:
1 Iceberg or cos lettuce
2 tablespoons oyster sauce
2 tablespoons hoisin sauce
2 tablespoons sweet chilli sauce
1 tablespoon soy sauce
1 teaspoon sesame oil
1 tablespoon olive oil
2 cloves garlic, crushed
1 onion
400g lean pork mince
Spring onion and crunchy noodles to top
Load with vegetables:
Corn, peas, diced mushroom, carrot, beans, zucchini, capsicum, water chestnuts. Basically any vegetables you like but keep them diced small or grated.
Fry off onion and garlic in wok with oil. Add pork and brown. Stir in sauces and veggies, simmer until cooked.
Wash lettuce and tear off leaves, add cooked meat/veg mixture and top with spring onion and crunchy noodles.
**You can also add some cooked noodles to the mix if you would like a more substantial meal.
